Making chicken Paprikash, a Hungarian stew with tons of paprika. Serving over egg noodles. What sides would you go with? A simple green salad for contrast or something a little more exciting?

How do you dispose of old/used cooking oil? I want to fry more things but also don't want to pour oil down my drains. I've used FryAway solidifier to some success but am looking to see if there are better ideas.
For holidays, do you go for the homey, nostalgic traditional feast or use it as an excuse to bust out exotic recipes and ingredients?
Mine finally kicked the bucket so I am looking for a new one. I want to get one of the top rated ones currently but it is hard to find actual user experiences that aren't paid for online. Most reviews seem to have been sponsored or something of that nature. I want to ask real people what they thing.
As for things I am looking for - I want something that is on the larger side as I have a family of 4 and need to be able to cook/make larger meals. I would also like it to be easy to clean. My last one had a rack in it and it was kind of a nightmare for me. I had to take it apart several times a week to clean everything which ends up defeating the purpose of it making meals faster when the clean up takes up so much of my time.
